5 1/2 cups All Purpose Flour

1 1/2 teaspoons baking powder

1 tsp salt

1 tsp nutmeg

1 tsp cloves

3 tsp ground ginger

2 tsp cinnamon

1 cup shortening -melted

1 cup white sugar

2 eggs

1 1/2 cup molasses


Mix all dry ingredients except for 1/2 cup of flour well. Add the wet ingredients and mix. Refrigerate for at least 30 mins.

Turn out onto well floured surface and add the reserved flour as needed. This dough can be difficult to work with so I often put a sheet of parchment paper on my baking sheet and roll out directly on to it. It is still awkward and the paper shifts so have a glass of wine handy…lol…I cut out my house or my cookies and then remove the waste dough, leaving the actual shape that I want on the baking sheet. Bake at 350 degrees for about 15 mins.
